DAGING MASAK KICAP PENGANTIN



Assalamualaikum dan selamat petang semua. Daging masak kicap pengantin ini merupakan juadah yang diajarkan oleh kakak saya yang sulung sewaktu kami sama-sama menjaga arwah emak yang sedang sakit di kampung. Ketika ini kakak, abang ipar dan anak saudara sedang mengerjakan umrah. Mudah-mudahan dipermudahkan Allah segala urusan mereka di sana. Biasanya hidangan ini dimasak untuk sesi pengantin makan beradap.
Jom kita kongsikan bersama resepi daging masak kicap pengantin yang sedap ini.....

Bahan-bahannya:

500 gram daging batang pinang
1/2 cawan pati santan
13 tangkai cili kering dikisar
5 biji bawang merah dikisar
2 biji bawang putih dikisar
3 batang serai dititik (yang ini saya tambah sendiri)
1/2 sudu teh jintan kasar disangrai dan dikisar
1/2 sudu teh jintan halus disangrai dan dikisar
1 sudu teh tinggi ketumbar disangrai dan dikisar
1 inci halia dikisar
2 batang kayu manis
3 kuntum bunga lawang
3 biji buah pelaga
5 kuntum bunga cengkih
gula secukup rasa
kicap masin secukupnya
sedikit kicap pekat
air asam jawa untuk mengisar

Cara-caranya:

1. Panaskan minyak. Tumiskan rempah 4 sekawan, bahan-bahan kisar dan serai yang dititik hingga pecah minyak.
2. Masukkan gula, kicap masin dan kicap pekat secukupnya.
3. Masukkan daging dan kacau sebati. Tambahkan sedikit air supaya daging cepat empuk.
4. Bila daging mulai empuk dan mesra dengan bahan-bahan tumisannya tadi tambahkan santan pekat. Kacau lagi.
5. Biarkan di atas api hingga daging benar-benar empuk dan mesra serta kuah menjadi pekat.

  3. salam en daun. bkn pengantin pn blh mkn en daun. jom dtg umah akk nnti akk hidangkan lauk ni. akk ni lg lah pengantin lama. hehe... sangrai tu maknanya digoreng tanpa minyak. mula2 ex ketumbar tu dicuci dulu, ditoskan baru digoreng tanpa minyak (sangrai), kdg2 dipanggil sangan n sangai.
